Method

  1. Preheat oven to 350 degrees. If using canned potatoes, drain and mash.
  2. Combine the potatoes with the other ingredients with an electric mixer.
  3. Place in a buttered casserole.
  4. Combine topping ingredients and sprinkle over potatoes.
  5. Bake, covered, for 30 minutes.
Julie's notes: she also does mini marshmallows and alternates the topping with marshmallows to make stripes. Make-ahead: bake only 10-12 minutes, cool and freeze; fully defrost, then cook about 30 minutes (or a little less), just until it heats through. From her email, Nov 24, 2020.
