Super Simple One-Pan Berry Pie

Ingredients

• 4 cups mixed berries, like strawberries, blueberries, raspberries and blackberries
• ⅓ cup sugar
• 3 tablespoons cornstarch
• 1 tablespoon lemon juice
• Pinch of salt
• 1 store-bought refrigerated pie crust
• 1 egg, beaten
• Coarse sugar, optional

Method

1. Heat oven to 400°F.
2. Unroll the crust onto a parchment-lined sheet pan. No pie plate needed
3. Combine berries, sugar, cornstarch, lemon juice and salt in a large bowl - mix well then put into a oven proof pan or dish - 9-10 in diameter would be ideal
4. Top with the crust, tucking in the edges
5. Mix the egg with 1 tablespoon water, brush evenly over the crust, and sprinkle with coarse sugar
6. Bake 35 to 40 minutes, until deeply golden and the berry juices are bubbling
7. Let cool at least 20 minutes before slicing
