Method

  1. In a large bowl mix warm water, active yeast and 1 tsp of sugar. Mix it and let it sit for 3 mins until foamy
  2. Add 2 eggs, oil and sugar to bowl and mix
  3. Add flour and salt and start mixing in either a mixer or by hand until the dough has no wrinkles, bumps or bubbles. If kneading by hand, it's best to remove the dough from the bowl and knead on a lightly floured surface. Knead for 5 mins in mixture (dough hook) or 10 minutes by hand.
  4. Grease a bowl and place dough inside, grease the top of the dough and cover with kitchen towel and let rise for 1-1.5hrs depending on temperature. You want the dough to double in size.
  5. After dough doubles in size remove from bowl on surface and knead for 1 minute to remove any air pockets.
  6. Cut the dough into half and cut the half into either 3 pieces, 4 pieces or 6 pieces for braiding.
  7. After braiding, place challah on parchment paper lined baking sheets. Cover with kitchen towel and let it rise for 2hrs or until double in size.
  8. Glaze with egg wash, bake 325 degrees F for 25 mins or until golden brown.
Making challah is a metaphor for life. Life feels like the culmination of what we appear to be random things. We are charged with making something out of nothing and we labour our way through the process. At the end we sometimes get to enjoy something which started as a sticky mess, and ended up being the showstopper. Notes: Double this recipe to make the Blessing on Challah called Hafrashat Challah
